~~~Ice Cream Pie~~~
Great when you know you are having company. MUST be prepared THREE days ahead. NOT good the first or second day.
~~~Ham and "Taters"~~~
This is waaay toooo simple, but a big time YUMMY favorite of ours.
Slice a few (3 or 4) medium potatoes crosswise. I don't peel mine. (can you tell already, that there's no set recipe for this? LOL
Put just enough Canola or Olive oil in a large skillet to just cover the bottom.
Use one package of "biscuit size" country ham pieces, or cut country ham into pieces that would fit on a biscuit.
Just toss ham and potatoes in the skillet and put a lid on it. Cook on low to medium heat
Lift lid and stir often, until potatoes get done and lightly brown.
I usually put a collander over a bowl and drain ham and potatoes in the collander when done.
It will surprise you how much the potatoes now taste like ham.

Chop lettuce and raw spinish.
Put mandarin oranges on top of bed of greens
Put toasted slivered almonds on top and add Italian dressing to taste.
It's HEAVENLY and so simple.

I have a couple of recipes of my own that are soooo simple and soooo good, I'd love to share them with you.
Bake and crumble a roll of Peanut butter cookies (found in the dairy case).
Set aside a handful of crumbs to sprinkle on top when finished.
Cover the bottom of a long baking dish 13x9? with cookie crumbs.
In a large mixing bowl, melt half gallon of vanilla ice cream and add one jar (7 oz?) caramel ice cream topping and stir it well.
Pour on top of crumbs and sprinkle remaining crumbs on top.
Freeze for THREE DAYS. Cut in small squares when serving. It's very rich and goes a long way. It's our favorite dessert. Hope you enjoy it.
